Our story

Our leader and inspiration, Giancarlo Caldesi, arrived in the UK in 1974, with just the shirt on his back. He started work at The Hilton as a waiter…

In 1997, Giancarlo met artist and aspiring food writer, Katie. He introduced her to the fundamentals of Italian cooking by reproducing his Nonna’s classic pasta with tomato sauce, salt, fresh basil and Parmigiano Reggiano. She was hooked – in more ways than one! This special dish is served to this day in both our restaurants and is not to be missed.

Giancarlo and Katie Caldesi married in 200- and have worked as a team for the last 30 years, combining their skills to maintain the tradition of Italian food, drink and culture that underpins the Caldesi Way.

Today, the family business is still run by this husband and wife team alongside their two sons, Giorgio Caldesi and Flavio Caldesi.
