Recipe for life-changing pasta

Tomato, mozzarella and basil pasta was the first recipe Giancarlo ever cooked for me and it changed my life! I was painting a mural for him in his restaurant and I joined in with the staff lunch. I thought it was the most delicious bowl of pasta I had ever tasted and it made me determined to learn to cook Italian. This is a simple recipe that relies on the flavour of really good tomatoes picked at the end of summer, creamy buffalo mozzarella and a great extra-virgin olive oil.

Mix chopped, ripe tomatoes in a large bowl with a little finely chopped garlic, spicy chopped chilli and salt and douse in extra-virgin olive oil.

Toss in hot, just cooked spaghetti and roughly torn basil. Give it a good stir and season to taste. Serve topped with roughly chopped buffalo mozzarella or halved burrata.
